Cepas Viejas (Old Vines) comes from vineyards on the northern side of the Jamuz River Valley. The soil is very poor and mainly sandy. The grapes are exposed to the winds off Mount Teleno and extensive sunlight, making them very fruity with light tannins.
Harvested by hand in 15-kg boxes. Manual selection in the vineyard. The grapes are put into wooden fermentation tanks box by box without destemming and with as little sulphur as possible to encourage spontaneous fermentation with local yeast. Macerated for 60 days and gently pressed. Aged in large French-oak barrels for 12 months.
