Vineyard
Las Jaras is our Vino de Pueblo, named after the flower that dominates the landscape and comes from several plots located along the valley. It has a different profile, more gourmand, due to the fact that its vineyards are located in the south of the valley at a lower altitude, the soils are more clayey and with a higher percentage of Prieto Picudo. These plots are the most accessible and closest to the villages, which is why they were kept in better conditions and over the years, the "faltas" were planted with Prieto Picudo instead of the valley's more typical Mencia. The average age of the vineyard is around 70 years, there is still a very high percentage of very old vines and the last plantations were around 1970.
Winemaking
Harvested by hand in 15 kg crates and hand-selected in the vineyard. Pressing of the whole bunches after a brief maceration and vatting for decanting in the cold at night. Once the must is clean, it is fermented in a French oak barrel where it will remain for up to 6 months with its lees, with periodic battonage.
Tasting notes
Brillante y suave color piel de cebolla. Nariz con sutiles aromas a melocotón y cítricos. De entrada, dulce y golosa, en boca es fresco, y equilibrado. Final agradable con recuerdos a frambuesa y pastelería propios de la fermentación. Post-gusto ligeramente salino.

Fountains of Silence X Chartier 2018

Location
Herreros de Jamuz. León
Strains
70% Las Quintas (Mencía, Alicante Bouschet, Prieto Picudo, Palomino and Doña Blanca), 20% Garnacha and 10% Prieto Picudo. Vineyard age between 50 and 100 years.
Viticulture
Recovery of centuries-old and pre-phylloxera strains. In the process of certification of organic vineyard.
Vintage features
The 2018 vintage was characterized by a rainy end to the winter, which allowed a green spring to begin, with a recharge of underground water reserves. The beginning of spring was fresh and with few rainy episodes, which allowed us to reduce the number of treatments in organic, and maintain an optimal health status until harvest. Later, temperatures gradually rose to normal levels, with some days of strong heat at the end of June, which did not last more than a week, so it did not affect the end of flowering. During the months of August and September, the days advanced with mild temperatures, with cool nights and great thermal jumps, being very beneficial for the ripeness of the grape. In these last months we also had no rainfall, with a dry end of ripening and healthy clusters, thick skin and very aromatic.
Vineyard
Las Quintas comes from our vineyards located in the northern moorland of the Jamuz Valley. The soils are very poor, mainly loamy-sandy. It is the area of greatest thermal contrast due to the altitude and exposure to the cold air currents of Mount Teleno and high sunshine, which gives us wines with a fruity aromatic profile and light tannins.
Winemaking
Harvest by hand in boxes of 15 Kg. Manual selection in the vineyard. Vatting box by box with 75% of whole bunches, in truncated cone-shaped French oak vats, adjusting the sulphur content to minimum doses in order to ferment with indigenous yeast. The maceration time is 40 days and after the alcoholic fermentation a soft pressing is carried out after which the wine is racked into 500 L barrels where it undergoes malolactic fermentation and is aged for 14 months.

The 2018 vintage was characterized by a rainy end to the winter, which allowed us to start a green spring with a recharge of water reserves in the subsoil. Subsequently, temperatures gradually rose to normal levels, with a few days of strong heat at the end of June, which did not last more than a week, so it did not affect the end of flowering. In these last months we also had no rainfall, with a dry end of ripening and healthy bunches, with thick skins and very aromatic.
Vineyard
La Gándara is the historic plot of Herreros de Jamuz. It is located on a small hill on the banks of the river. At its highest point, 830 metres above sea level, there is a plain of about 1.3 hectares of very old vines surrounded by a holm oak forest. The vineyard, with vines between 70 and 100 years old, mainly Mencía, is situated on red clay with a high iron oxide content.
Winemaking
Harvest by hand in 15 kg crates. Manual selection in the vineyard. Box by box vatting of the grapes without destemming, blending the Mencía, Alicante Bouschet and Palomino varieties in 500L open barrels of French and Austrian oak with minimum doses of sulphur to ferment with indigenous yeast. Maceration for 60 days and soft pressing. Aged for 14 months in 500L French and Austrian oak barrels.
Tasting notes
La Gándara is the darling of Fuentes del Silencio; the special characteristics and small production we obtain from this vineyard allow us to take our winemaking philosophy of experimentation and non-intervention to its highest expression. La Gándara is a wine that faithfully reflects its environment. On the nose, the aromas of wild flowers, rockroses and scrubland stand out, accompanied by exuberant red fruits. On the palate, it is fresh, balsamic and delicate. Long and persistent, it evokes the landscape from which it comes.

Viticulture
Recovery of centuries-old strains. In the process of certification of organic vineyards
Vintage features
The 2018 vintage was characterised by a rainy end to the winter leading to a green start to spring with the subsoil full of water reserves. Early spring was cool, with little rain, which made it possible to reduce the number of organic treatments as much as possible, keeping the vines in the best possible health until harvest. Later, temperatures gradually rose to normal levels, with a few really hot days in late June, although no more than a week of them, so the end of flowering was not affected.August moved on into September with mild temperatures, cool nights and big temperature swings, greatly helping the ripening of the grapes. In these last months we had no rain, so the end of ripening was dry, producing healthy, highly aromatic grapes with thick skins.
Vineyard
Mataperezosa is obtained from our old vineyards in the northern part of the Jamuz valley. They have very poor soil – basically sandy loam – accompanied by quartzite conglomerate and fragments of quartz and slate. There are great temperature contrasts in the area due to its high levels of sunlight and exposure to cold air currents from Monte Teleno. The vineyards are an average of 90 years old but we have no complete parcels of white grapes, just some vines mixed in with the red ones.
Winemaking
Harvest by hand in 15 kg boxes. Manual selection in the vineyard. Whole bunches are pressed and vatted to settle in the night-time cold. Once the must is clean, it ferments in French oak barrels where it remains for up to 12 months on its lees, with periodic batonnage.
Tasting notes
Straw yellow in colour with hints of gold. Aromas of white flowers, citrus fruit and aniseed. In the mouth it is light, fresh and vibrant with touches of citrus and pastry notes.

Vineyard
Las Jaras is our Vino de Pueblo, a blend of selected plots along the Jamuz Valley. Its name is due to the flower that dominates the landscape, La Jara. It has a different profile from the rest, more greedy, for the location of their vineyards, south of the valley, at lower altitude, with more clayey soils and higher percentage of Prieto Picudo. Winemaking
Hand-picked in 15 kg boxes and hand-selected in the vineyard. The boxes are poured into truncated cone shaped wooden vats made of French oak and the grapes are crushed by adding very little sulphur to allow spontaneous fermentation using the native yeasts. It macerates for 35 days and carries out the malolactic fermentation in oak vats and concrete tanks, where it rests for nine months.
Tasting notes
Deep ruby red colour and brilliant appearance. Intense and complex nose, with delicate aroma of black fruits, balsamic notes and memories of rockrose and scrubland. Sweet and greedy at first, it is pleasant and deep in the mouth. Its freshness and acidity stand out, as well as the pleasant synergy between spicy notes, cocoa and wild fruits.

Tasting notes
Very expressive and bright cherry red cherry colour. Intense red fruit aromas predominate, along with elegant and subtle toasted and balsamic notes, cut grass and juniper. The palate is delicate, with just the right amount of tannic concentration and freshness, with an unctuous passage and a slightly saline mineral background. The use of a low percentage of new oak allows for a balanced blend of fruity sensation with smoky and spicy flavours and a long, lingering finish.

Viticulture
Recovery of centuries-old and pre-phylloxera strains. In the process of certification of organic vineyard.
Vintage features
The 2016 vintage was characterized by a winter end and an early spring, with abundant rainfall, restoring the soil water reserves. The end of spring, summer and early autumn stood out for the absence of precipitation and high temperatures. However, the good water reserves of the soil made it possible for the plant to have enough water to be able to carry out a correct flowering, a good enveration and decosting of shoots and finally a rapid and smooth maturation. Episodes of heat and no rainfall during the summer contributed to the old vines producing smaller and higher concentration clusters.
Vineyard
La Gándara is the historic plot of Herreros de Jamuz. It is a small hill on the banks of the river. At its highest level of 830 meters of altitude there is a plain of about 2 hectares of very old vineyards surrounded by a forest of holm oaks. The vineyard on reddish sand is mainly Mencía between 100 and 70 years old.
Winemaking
Harvest by hand in boxes of 15 Kg. Manual selection in the vineyard. Incubated box to box of the grapes without destemming mixing the varieties Mencía, Alicante Bouschet and Palomino in a tub of French oak wood conical with minimum doses of sulphur to ferment with native yeast. 60-day maceration and gentle pressing. Aged for 12 months in high volume French oak barrels.
Tasting notes
The Guidal is the pampered girl from Fountains of Silence; the special characteristics and small production that we obtain from this vineyard allow us to bring our philosophy of winemaking of experimentation and not intervention to its greatest expression.
